Breakfast Cookies

Makes ~14 cookies

Ingredients:

  • 3/4 cup Mashed Over-Ripe Banana
  • 5 dates
  • 1 Tbsp. Coconut Oil
  • 1 egg
  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Sea Salt
  • 1/2 tsp. Cream of Tartar
  • 1/3 cup Coconut Flour
  • 1/2 cup Almond Meal
  • 1/8 cup Shredded Coconut
  • 1/8 cup Raisins

Directions:

  1. In a food processor, add dates and pulse 10-12 times until chopped. Add banana and coconut oil and run food processor for 45-60 seconds until smooth. Add egg, cinnamon, salt, and cream of tartar and run for 10-15 seconds. Add coconut flour and almond meal and pulse until combined, about 8-10 times. Stir in shredded coconut and raisins. Portion about tablespoons of dough onto a lined baking sheet and lightly flatten.
  2. Bake in a preheated 350F for 20-22 minutes. Cool on a wire rack. Store remaining cookies in a sealable bag for up to 3 days.

Paleo Breakfast Cookies are a great quick breakfast or grab one on the way out the door as a snack!
