Pumpkin Muffins
Ingredients:
- 1 cup pumpkin puree
- 6 eggs
- 2 Tbsp. coconut oil
- 2 Tbsp. maple syrup
- 2 tsp. vanilla
- 1 cup almond meal
- 3/8 cup coconut flour
- 2 tsp. baking powder
- 1/2 tsp. sea salt
- 2 tsp. pumpkin pie spice
Directions:
- Preheat oven to 350F.
- In a mixing bowl, add pumpkin, eggs, oil, syrup, and vanilla. Whisk until well-combined. Add almond meal, coconut flour, baking powder, salt, and pumpkin pie spice. Stir with a spoon or rubber spatula and then pour batter into an oiled muffin pan or silicone baking cups.
- Bake for 25-28 minutes or until muffins lightly spring back and a toothpick comes out clean.
- Cool and store leftovers in a resealable bag for up to 2 days.
