Pumpkin Muffins


  • 1 cup pumpkin puree
  • 6 eggs
  • 2 Tbsp. coconut oil
  • 2 Tbsp. maple syrup
  • 2 tsp. vanilla
  • 1 cup almond meal
  • 3/8 cup coconut flour
  • 2 tsp. baking powder
  • 1/2 tsp. sea salt
  • 2 tsp. pumpkin pie spice


  1. Preheat oven to 350F.
  2. In a mixing bowl, add pumpkin, eggs, oil, syrup, and vanilla. Whisk until well-combined. Add almond meal, coconut flour, baking powder, salt, and pumpkin pie spice. Stir with a spoon or rubber spatula and then pour batter into an oiled muffin pan or silicone baking cups.
  3. Bake for 25-28 minutes or until muffins lightly spring back and a toothpick comes out clean.
  4. Cool and store leftovers in a resealable bag for up to 2 days.
