{"id":454,"date":"2014-03-13T01:49:26","date_gmt":"2014-03-13T01:49:26","guid":{"rendered":"http:\/\/www.paleofoodcooking.com\/?p=454"},"modified":"2014-03-13T01:49:26","modified_gmt":"2014-03-13T01:49:26","slug":"luscious-lemon-bars","status":"publish","type":"post","link":"https:\/\/www.paleofoodcooking.com\/?p=454","title":{"rendered":"Luscious Lemon Bars"},"content":{"rendered":"<div id=\"attachment_453\" style=\"width: 650px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/www.againstallgrain.com\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-453\" class=\" wp-image-453 \" alt=\"Luscious Lemon Bars\" src=\"http:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/03\/LemonBarsAAG.jpg\" width=\"640\" height=\"412\" srcset=\"https:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/03\/LemonBarsAAG.jpg 640w, https:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/03\/LemonBarsAAG-300x193.jpg 300w, https:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/03\/LemonBarsAAG-332x213.jpg 332w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><p id=\"caption-attachment-453\" class=\"wp-caption-text\">Courtesy of: <a href=\"http:\/\/www.againstallgrain.com\" target=\"_blank\">www.againstallgrain.com<\/a><\/p><\/div>\n<p>Ingredients:<\/p>\n<ul>\n<li>\u00bd cup finely ground raw sunflower seeds, sifted (60g)<\/li>\n<li>\u2154 cup coconut flour, sifted (90g)<\/li>\n<li>\u00bd teaspoon baking soda<\/li>\n<li>2 tablespoons unsalted butter or coconut oil, plus more for greasing dish<\/li>\n<li>2 tablespoons honey<\/li>\n<li>2 eggs<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1\u00bd teaspoon fresh lemon juice<\/li>\n<\/ul>\n<p>Filling:<\/p>\n<ul>\n<li>3 large eggs plus 1 yolk, lightly beaten<\/li>\n<li>\u00bd cup honey<\/li>\n<li>\u00be cup fresh lemon juice, strained<\/li>\n<li>3 tablespoons coconut flour, sifted<\/li>\n<li>1 teaspoon lemon zest, finely grated<\/li>\n<\/ul>\n<p>Instructions:<\/p>\n<ol>\n<li>Preheat oven to 350 degrees F.<\/li>\n<li>Combine all of the crust ingredients in a food processor. Process for 15 seconds to combine. Scrape down sides if necessary and pulse once or twice more until a dough forms.<\/li>\n<li>Lightly grease a 9\u00d79 square baking dish with butter. Press the dough into the bottom and slightly up the sides of the dish.<\/li>\n<li>Prick the dough a few times all over with a fork then bake for 10 minutes. Remove from the oven and cool on a wire rack while you prepare the filling.<\/li>\n<li>Whisk together all of the filling ingredients. Allow the coconut flour to absorb for 10 minutes, then whisk again until the filling is smooth.
