{"id":451,"date":"2014-03-13T01:41:49","date_gmt":"2014-03-13T01:41:49","guid":{"rendered":"http:\/\/www.paleofoodcooking.com\/?p=451"},"modified":"2014-03-13T01:41:49","modified_gmt":"2014-03-13T01:41:49","slug":"caramel-apple-spice-waffles","status":"publish","type":"post","link":"https:\/\/www.paleofoodcooking.com\/?p=451","title":{"rendered":"Caramel Apple Spice Waffles"},"content":{"rendered":"<div id=\"attachment_450\" style=\"width: 650px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/www.againstallgrain.com\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-450\" class=\" wp-image-450 \" alt=\"Caramel Apple Spice Waffles\" src=\"http:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/03\/AppleWaffles1.jpg\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/03\/AppleWaffles1.jpg 640w, https:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/03\/AppleWaffles1-300x200.jpg 300w, https:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/03\/AppleWaffles1-332x221.jpg 332w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><p id=\"caption-attachment-450\" class=\"wp-caption-text\">Courtesy of: <a href=\"http:\/\/www.againstallgrain.com\" target=\"_blank\">www.againstallgrain.com<\/a><\/p><\/div>\n<p>Ingredients:<\/p>\n<ul>\n<li>3 large eggs<\/li>\n<li>\u00be cup whole macadamia nuts or raw cashews<\/li>\n<li>\u00bc cup raw pecans<\/li>\n<li>\u00bc cup unsweetened almond milk or coconut milk<\/li>\n<li>3 tablespoon coconut oil, melted<\/li>\n<li>2 tablespoon honey<\/li>\n<li>\u00bc cup coconut flour<\/li>\n<li>\u00be teaspoon baking soda<\/li>\n<li>\u00bc teaspoon sea salt<\/li>\n<li>2 teaspoon pumpkin pie spice<\/li>\n<\/ul>\n<p>Caramelized Apple Syrup:<\/p>\n<ul>\n<li>3 tablespoon unsalted grassfed butter, ghee, or palm shortening<\/li>\n<li>\u00bc cup honey, preferably light in color<\/li>\n<li>1 lb baking apples \u2013 peeled, cored, and diced<\/li>\n<li>\u00bc cup coconut milk<\/li>\n<li>pinch of sea salt<\/li>\n<\/ul>\n<p>Instructions:<\/p>\n<p>Waffles:<\/p>\n<ol>\n<li>Preheat a waffle iron.<\/li>\n<li>Combine the eggs, macadamia nuts, pecans, milk, honey, and melted coconut oil in a blender. Blend until very smooth and creamy. If needed, stop the blender and push the mixture down the sides with a spatula to ensure a smooth blend.<\/li>\n<li>Add the salt, baking soda, and coconut flour, and blend again for about 30 seconds until fully incorporated.<\/li>\n<li>If the waffle iron requires oil, spread a little coconut oil on both sides.<\/li>\n<li>Pour the batter into the waffle iron so it just covers the bottom portion of the iron, being careful not to overfill as these do rise quite a bit and will spill over.<\/li>\n<li>Cook the waffles until the waffle iron has stopped steaming, about 45 seconds. Each waffle iron may differ in cook times.<\/li>\n<li>Repeat until the batter has been used up.<\/li>\n<li>Serve hot with caramelized apple syrup!<\/li>\n<\/ol>\n<p>Syrup:<\/p>\n<ol>\n<li>Melt the butter in a skillet over medium heat. Once it has melted, whisk in the honey and bring to a boil. Reduce heat and simmer for 2 minutes.<\/li>\n<li>Add apples and saut\u00e9 for 10 minutes, or until the apples are browned and tender.<\/li>\n<li>Stir in coconut milk and sea salt and bring to a boil again.
