{"id":390,"date":"2014-02-27T00:23:35","date_gmt":"2014-02-27T00:23:35","guid":{"rendered":"http:\/\/www.paleofoodcooking.com\/?p=390"},"modified":"2014-02-27T00:24:44","modified_gmt":"2014-02-27T00:24:44","slug":"paleo-chili","status":"publish","type":"post","link":"https:\/\/www.paleofoodcooking.com\/?p=390","title":{"rendered":"Paleo Chili"},"content":{"rendered":"<div id=\"attachment_389\" style=\"width: 370px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/www.thepaleotable.com\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-389\" class=\"size-full wp-image-389 \" alt=\"Courtesty of: www.thepaleotable.com\" src=\"http:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/02\/IMG_2813.jpg\" width=\"360\" height=\"240\" srcset=\"https:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/02\/IMG_2813.jpg 360w, https:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/02\/IMG_2813-300x200.jpg 300w, https:\/\/www.paleofoodcooking.com\/paleo\/wp-content\/uploads\/2014\/02\/IMG_2813-332x221.jpg 332w\" sizes=\"auto, (max-width: 360px) 100vw, 360px\" \/><\/a><p id=\"caption-attachment-389\" class=\"wp-caption-text\">Courtesy of: <a href=\"http:\/\/www.thepaleotable.com\" target=\"_blank\">www.thepaleotable.com<\/a><\/p><\/div>\n<p>Ingredients:<\/p>\n<ul>\n<li>grassfed sirloin steak &#8211; 1 pound, cut into bite-sized pieces<\/li>\n<li>grassfed ground beef &#8211; 1 pound<\/li>\n<li>bulk Italian sausage &#8211; 1 pound<\/li>\n<li>butternut squash &#8211; 1 small or 1 package pre-cut, but into 1\/2-inch dice<\/li>\n<li>onions &#8211; 2, chopped<\/li>\n<li>sweet red pepper &#8211; 2, chopped<\/li>\n<li>extra virgin olive oil or coconut oil &#8211; 1 Tbsp<\/li>\n<li>crushed tomatoes &#8211; one 28 ounce can (Muir Glen Organic Fire Roasted)<\/li>\n<li>diced tomatoes &#8211; two 14.5 ounce cans (Muir Glen Organic Fire Roasted)<\/li>\n<\/ul>\n<p>Spices:<\/p>\n<ul>\n<li>bay leaves &#8211; 2<\/li>\n<li>chili powder &#8211; 2 Tbsp<\/li>\n<li>paprika &#8211; 1 Tbsp<\/li>\n<li>dried oregano &#8211; 1 tsp<\/li>\n<li>ground cumin &#8211; 1 tsp<\/li>\n<li>crushed red pepper &#8211; 1\/2 tsp<\/li>\n<li>sea salt &#8211; 1\/2 &#8211; 1 tsp<\/li>\n<\/ul>\n<p>Garnish Ideas:<\/p>\n<ul>\n<li>avocados &#8211; 2 ripe, mashed and seasoned with a little salt and pepper<\/li>\n<li>black olives &#8211; sliced<\/li>\n<li>onions &#8211; chopped<\/li>\n<li>jalapeno peppers<\/li>\n<li>paleo sour cream<\/li>\n<\/ul>\n<p>Preparation:<\/p>\n<ol>\n<li>Preheat oven to 400\u00baF.<\/li>\n<li>Peel and cube squash, transfer to a rimmed baking sheet and bake for 15-20 minutes or until it just begins to soften. Remove from oven and set aside.<\/li>\n<li>While squash bakes, cook sausage and ground beef in a large skillet over medium heat. Use a slotted spoon to transfer meat to a stock pot or Dutch oven.<\/li>\n<li>Add steak to the drippings in the skillet and brown on all sides, stirring occasionally. Use a slotted spoon to transfer to the pot.<\/li>\n<li>In a large skillet over medium heat, warm 1 Tbsp oil. Add chopped onion and peppers and cook until onion starts to become translucent, about 10-15 minutes.<\/li>\n<li>Add squash, onions, peppers, tomatoes, and spices to meat mixture.
