Cinnamon Raisin Energy Bars

Ingredients:
- 1 cup pecans
- 1/2 cup chopped walnuts
- 1/4 cup pitted and chopped dates
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup slivered almonds
- 1/2 cup raisins
- 1/2 cup unsweetened shredded coconut
- 1/4 cup raw honey
- 1/4 cup coconut butter
- 1 tsp vanilla
- 1 1/2 tsp cinnamon
- 1/2 tsp allspice
- 1/4 tsp sea salt
Servings: Makes about a dozen, 4-inch long bars
Instructions:
- Grease an 8X8 baking dish with coconut oil
- Place the pecans, walnuts and dates together in a blender or food processor and pulse until ground small (this mixture is the binder for the bars)
- In a large mixing bowl, combine the pulsed ingredients with the shredded coconut, raisins and the rest of the nuts and seeds
- Next, in a small saucepan, combine the honey, coconut butter, vanilla, salt, and spices
- Stir over medium-low heat until mixture becomes bubbly
- Pour the saucepan mixture over everything in the large mixing bowl
- Mix thoroughly, using your hands if necessary to combine
- Press into the bottom of the greased pan, pushing firmly to form an even layer
- Cover and place in the freezer for about 20-30 min
- Remove, slice and gobble
*Note: Wrap and keep these in the fridge for a quick grab and go snack. Best enjoyed chilled.
